I'm so pleased you've signed up for the weekly recipes here at Kosher Innovations. I'm looking forward to an exchange of tips and ideas using The Bug Checker Portable Light Board.

Before the Bug Checker was introduced to the market, we'd had it for about six months. Whenever my husband, Rabbi Veffer, comes up with an idea for Kosher Innovations, we have the opportunity to test the product first, in our own home.

 "Abba's home with a new invention!" has become the much anticipated cry in our house. We all gather around the table as he unwraps the prototype of the latest invention and everyone wants to try the new product first.

When he brought home the Bug Checker Portable Light Board I was sure I'd be the only one interested in trying it out. Generally, anything having to do with the kitchen and food preparation has my family drifting off to take care of other pressing matters that conveniently come up right around dinner time!

"Will we be able to really see the bugs? Are they crawling? Can I try?"

The Bug Checker looks so bright and compact and the construction makes it so light  that I had to wait my turn to use it when my husband brought it home.

Everyone went scrambling for the lettuce I'd purchased to test the Bug Checker (and serve for dinner) and promptly soaked, washed and checked it while I watched!

The crisp, flavorful romaine lettuce that we used in the Caesar salad was a hit. Everyone asked for seconds. (I've included my recipe for Caesar salad below.)


Over the last six months I've incorporated the Bug Checker into my daily meal planning. Checking berries and herbs and of course all the varieties of lettuce has become so easy. My arms don't get tired. I no longer have to hold the leaves up to the window or fluorescent light. No more wet arms and sore neck.

Checking lettuce has become almost a pleasure!

I've expanded the variety of fresh produce I use and I've noticed that there is definitely a difference in taste and texture between bagged and fresh foods. My family has noticed too and salads have become a fixture at most meals.

I'm more confident that I'm able to check the veggies well, using The Bug Checker, so I've begun to try a larger variety of lettuce and herbs, like red lettuce, Boston lettuce, basil and mint.

Because loose produce costs less, I'm able to serve it often. I've also discovered that once the fresh lettuce is checked and put in resealable plastic bags, it keeps for 5 days in the fridge, no matter how many times I open and close the bag.

Although for my children, the novelty of using the Bug Checker has eventually worn off, as I knew it would, they still choose checking produce as one of their favorite jobs when helping in the kitchen.

The Bug Checker Portable Light Board has taken its place beside the other Kosher Innovations products. The KosherLamp, KosherClock, Teddy Light and now the Bug Checker all use modern technology to enhance my Torah life.

I can't wait to see what's in store when we next hear the words,

Crowd Pleasing Caesar Salad

INGREDIENTS:

SALAD
3 heads of Romaine lettuce or 4 Romaine hearts
4 slices of whole wheat bread - with crust
(white bread or leftover chala work just as well)
2 tablespoons olive oil (for the croutons)
1 tablespoon Kosher salt or to taste (optional)
2 teaspoons of garlic powder or to taste

DRESSING
2 cans of anchovies in oil - 50g. (1.76 oz.) each
4 cloves of garlic
15 tablespoons olive oil
5 tablespoons of white vinegar

Makes 1 1/4 cups of dressing.

DIRECTIONS:

Preparing the Lettuce
When using whole Romaine lettuce, discard the outer few leaves first.
After checking the lettuce, dry it well. Seal the whole leaves in large resealable plastic bags.

Homemade Croutons
Cut the bread into ½ inch cubes. Spread on a cookie sheet lined with baking paper.
Toss bread with 2 tablespoons of oil, salt and garlic. Bake at 350° for 10 minutes,
turning halfway through. Cool and store in a resealable bag or airtight container.

Caesar Salad Dressing
In a food processor, finely chop the 4 cloves of garlic. Add the anchovies (oil from the
cans too) to the food processor and run until the consistency of paste. Add the olive oil and
vinegar and run until smooth. Stores in a sealed container in the refrigerator for up to 10 days.

Note: The anchovies (fish) in the dressing make it suitable for use with
dairy meals or as a first course for a meat meal.

Assembling the Salad
Select the amount of salad that you will need for two salad bowls and tear
into bite-sized pieces. Add half the croutons to each bowl, the amount of
dressing to your personal taste and toss. You may want to add more dressing
after you taste it.
